A large cut of meat calls for room to work along the edge. GiantMouse’s new Butcher Knife answers with a 9.33-inch blade and a pronounced curved belly, bringing the brand’s outdoor-tool sensibility to kitchen preparation.

The Italian-made knife uses Nitro B steel and full-tang construction, with the steel continuing through the handle. Its overall length is 14.08 inches, including a 4.75-inch grip. The sweeping edge is intended for longer slicing motions through brisket and other large cuts, while a contoured handle gives the hand a defined place to settle during preparation.

Two versions make different material choices around that shared shape. The green canvas Micarta model pairs its textured handle with a reflective satin blade. The red G10 version uses a stonewashed finish, offering a less pristine-looking surface for repeated use. GiantMouse notes that fine scratches will be more visible on the satin model.

That distinction is worth considering for kitchen cutlery intended to spend more time on a board than in a display case. Both versions require hand washing and immediate drying; neither is dishwasher-safe.

The Butcher Knife is made in Maniago, Italy, and is available from GiantMouse at $215 with green Micarta or $225 with red G10.
