Kentucky Peerless Distilling Co. and Copper & Kings American Brandy Co. have teamed up for something truly special–Peerless x Copper & Kings Rye Aged in Absinthe Barrels. It starts with the award-winning Peerless Rye Whiskey that is non-chill filtered and strictly sweet mash except this time around it is barrel proof and clocks in at a hefty 111.5 proof. After that, the complex rye goes into a C & K Absinthe Alembic barrel for additional finishing that imparts the absinthe flavors into the whiskey itself.
As Peerless Master Distiller Caleb Kilburn describes, “I devised one of the most unique and flavorful barrel finishes that has ever been made: A Peerless Rye Whiskey finished in a C&K Barrel-Aged Absinthe barrel. I wanted something that would provide the perfect contrasting notes to allow both the rye and the absinthe to be appreciated.” This new whiskey is said to be sharp and powerful, bursting with warm spices and herbal notes. The palate is rich and reminiscent of the Peerless rye character, with the added element of fresh, herbal notes and a longer finish.
