Olive Wagyu meat is naturally infused with incredibly high levels of peptides and glutamic acid to create a bolder flavor of umami than you will find in Kobe beef or even standard A5 Wagyu. And because Olive Wagyu cattle receive a diet that is rich in olives, they also feature the highest oleic acid levels of any Japanese beef. This abundance of oleic acid greatly improves the texture of each Olive Wagyu steak, promoting an extraordinarily soft, “melt in your mouth” feel.
