Independent bottler Proof & Wood has unveiled a new chapter in its Tumblin’ Dice lineup: an 11‑year Bottled‑in‑Bond straight bourbon. Distilled at MGP in the fall of 2014, the whiskey was laid down for more than a decade in new charred oak barrels and bottled at 100 proof, meeting the strict standards of the Bottled‑in‑Bond Act of 1897. With a mash bill of 99 percent corn and 1 percent barley, it promises a sweeter, richer profile than the brand’s high‑rye releases.

The debut marks Proof & Wood’s first foray into bonded bourbon and offers a new line extension within the growing Tumblin’ Dice portfolio. Previous editions ranged from six to twelve years and emphasised high‑rye mash bills; by contrast, this expression focuses on corn to accentuate caramel and vanilla notes. According to founder Dave Schmier, the release underscores a commitment to transparency and heritage: the whisky was produced in a single distillation season, aged under U.S. government supervision and bottled by Bluegrass Bottling, yielding roughly 400 cases.

Fans can expect a balance of sweetness and structure, with extended aging bringing depth to the high‑corn recipe. Bottled‑in‑Bond status has become a mark of authenticity among American whiskey enthusiasts, and Tumblin’ Dice’s entry will likely pique interest when it arrives in limited quantities at select retailers and online.

For collectors and bourbon drinkers seeking something with both provenance and flavor, this 11‑year expression provides a compelling addition to the ever‑evolving independent spirits scene.
