Texas-based Koopers Whiskey expands its portfolio with a limited 7-year rye finished in French Cognac casks, reinforcing its focus on thoughtful barrel finishing as a defining house style. The release builds on the distillery’s ongoing exploration of how secondary maturation can add dimension without overwhelming a whiskey’s original character.

The foundation is a straight rye distilled in Indiana and aged for seven years in new charred American white oak barrels. This traditional aging process develops the familiar backbone of rye—peppery spice, structured oak, and a firm, dry profile. The whiskey is then transferred to carefully selected Cognac casks sourced from France, where it rests for an additional finishing period designed to introduce nuance rather than dominance.

The influence of the Cognac barrels is evident in the whiskey’s aromatic and flavor profile. Subtle notes of orchard fruit, light florals, and a gentle nuttiness emerge, softening the sharper edges of the rye while preserving its core identity.
